90 Second Incredible Italian Bread {grain & gluten free}


Bread that isn't really bread, but acts like bread, looks crazy similar to bread AND takes only 90 seconds to make! Gluten/grain free and low carb too! WHHAATTT?! I promise it isn't too good to be true! 

I recently started following a Ketogenic Diet, so I have been experimenting with different bread alternatives for the occasional times that I feel like having a sandwich! If you aren't familiar with the Ketogenic Diet, it is a low carb, high fat, moderate protein way of eating; no sugar or starchy carbs (ie. potatoes, grains). My approach is dairy-free, organic and whole foods based, so this recipe is a reflection of that; however, there are plenty of variations for this recipe as it is very versatile! I hope you give it a try and that you enjoy it as much as I do! ❤

What your going to need to make the magic happen!

 These are the ingredients you will need to make your 90 sec bread! Like I said, this recipe has lots of options! The original recipe calls for butter, but I use ghee (clarified butter) because I am dairy-free. I have also used coconut oil and you could also use avocado oil! If you are using a solid fat, you will need to melt it before adding all the other ingredients. You may also omit the Incredible Italian spice blend when you want to top it with something like almond butter, and sub in some sea salt :) There are also varying recipes that use coconut flour instead of almond flour, suitable for those with nut sensitivities.

One of the other things I love about this recipe is that it doesn't make a million dishes (I have enough of those already)! Just one dish and some utensils! You can melt your fat in the ramekin (just until melted) and then add the other ingredients after.

 Use a whisk or fork and make sure to mix the batter until smooth!

The results!!!
 Pop it in the microwave for 90 seconds. It will be HOT! Let it cool for a few mins before removing it from the ramekin. If it doesn't fall out when flipped upside down, gently run a knife along the edges and it will come loose. NOTE: I have not tried an oven method but I know it can be done! I will edit this post once I have done it, to include the directions for that way too!
Take a sec to admire it before slicing it in half :)

You will notice that it is a bit "eggy" in texture - don't freak out! As soon as it's cool to the touch, you can cut the bread in half and pop it in the toaster, toaster oven OR use a lightly greased pan to toast it! This will give it more of a toasty bread-like consistency that is delicious either warm or cold!

Cut in half and ready to be toasted!

90 Second Incredible Italian Bread {grain & gluten free}


Ingredients:
3 Tbsp. Almond Flour
1 egg
1/2 tsp. Baking Powder
1.5 Tbsp. Butter (or other fat of choice, mentioned above)


Directions:

1. In a ramekin (or other small, microwave safe dish), melt your oil in the microwave until just melted (not too hot)!
2. Carefully remove ramekin from microwave and add in all the other ingredients; combine with a fork or small whisk until all ingredients are incorporated and the batter is smooth.
3. Place the batter filled ramekin into the microwave and cook for 90 seconds.
4. WARNING: your dish is going to be HOT! Let it cool in the microwave for a minute, or use something to take it out of the microwave and set it on a safe surface for a few minutes to let it cool.
5. Once cool to the touch, gently run a knife along the edges of your bread to loosen and then flip the dish over and let it fall out.
6. While you can eat this bread as is, it is MUCH better toasted! I throw mine in the toaster but you can also use a toaster oven, or quickly fry it in a lightly greased pan to get it toasty. 
7. Now your ready to fill it with whatever your heart desires! Today I did avocado toast (pictured above), but the options are truly endless! ENJOY!
