Totally Taco Pie
Hello everyone! It's been way too long since we've posted on our blog, but we hope to make up for that with this seriously delicious way for your whole family to enjoy TACOS! This recipe is super quick and easy, with minimal ingredients needed - in fact, you probably have everything you need to make it right now! This taco pie is low carb and grain free!
Here's a pic of our kids enjoying the Totally Taco Pie! Our oldest is 5 and our youngest is 2! We like to serve it to them salad-style (gotta get those veggies in where ya can)! Chop up the pieces of pie and add a handful of chopped greens, tomatoes, green onion, avocado and then drizzle with homemade ranch dressing or even a mix of sour cream/greek yogurt and salsa!
TOTALLY TACO PIE
serves 4-6
All You Need:
1 lb ground beef (or poultry)
2-3 Tbsp T&A Spice Co. Totally Taco seasoning (depends on how spicy you like it)
2/3 C water
3 eggs
1/2 C heavy cream OR coconut cream
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1 C shredded cheese
All You Do:
1. Preheat oven to 350℉
2. Brown ground meat on med-high in a large pan and drain before adding seasoning.
3. Mix Totally Taco seasoning and water in a small bowl (I like to use a small glass pyrex measuring cup) and pour over browned meat.
4. Reduce heat to med-low and simmer until water is gone and meat is saucy.
5. Transfer the beef mixture to a greased 9" pie dish and spread it into an even layer.
6. Whisk together the eggs, cream, garlic powder, salt and pepper in a bowl (or large measuring cup). Pour the mixture over the beef and top with the cheese.
7. Bake for 30 mins.
8. Allow the pie to cool for 5 mins before cutting/serving.

*recipe is adapted from All Day I Dream About Food. The original recipe uses 6 eggs and a full cup of cream. Less eggs and cream were used with this recipe in order to reduce calories and egginess*
